I was craving something sweet Friday night and thought I would whip up some healthy cookies with ingredients I had on hand. You can’t really go wrong with banana, oats and chocolate chips, right? You could enjoy these cookies as breakfast too, but I prefer them as a cookie to enjoy at night with some almond milk. Get the deets below!
1 cup oats
1/2 cup chocolate chips (or you could use carob chips)
Sprinkle in cinnamon & add some honey
*Unsweetened coconut would be great in this too!
Preheat oven to 350
Mash bananas with oats (I used a potato masher)
Fold in the chocolate chips, sprinkle in cinnamon & add some honey on top (Mix with hand)
Ball up mix into the size cookies you want (I did about 1 inch cookies)
Place balls of dough on a cookie sheet
Bake for 15 minutes and allow to cool
