Since becoming semi vegetarian I have been eating a lot more tofu and struggling with how to get creative with it other than just adding it to my stir fry. My latest take on tofu is the easiest way to cook it, yet I had never thought about making it this way before; fried. Duh. I don’t even have the words to tell you how amazing this tastes and how versatile this recipe can be. Fried tofu is perfect to be added to a salad with dressing drizzled over it or alone with a veggie, dipped in organic marinara sauce or whatever your favorite sauce may be. I paired my fried tofu with grilled artichokes. How do you get creative with your tofu?
Fried Tofu Directions:
1. Cut up your tofu (one block makes four servings, store the leftovers in the fridge in a ziplock bag).
2. Whisk an egg in a bowl, dip your tofu in the egg wash OR dip the pieces in corn starch and skip the egg.
3. Pour panko bread crumbs on a plate and dip the tofu pieces in the panko.
4. Heat up coconut oil in a pan till it is very hot. Drop your panko-encrusted tofu slices in the oil and “fry” them until they are browned on all sides.
