Haute + Healthy Southwest Salad.

My latest obsession? Adding corn to my salad. I don’t know why I never thought of this before but it adds a unique flavor that is perfect during the summer. I guess I always thought about corn containing no healthy benefits, but after researching it turns out that is a bit of a myth. An ear of corn has about the same number of calories as an apple and less than one-fourth the sugar. Corn is also a rich source of vitamins A, B, E and many minerals, along with being high in fiber. Here is how I mix corn into my salad:

Ingredients: Mixed greens, cucumbers, tomatoes, red onion, corn, almonds + olive oil & vinegar
