Spinach Patties.

Happy Tuesday! I wanted to share my new favorite recipe with you guys; spinach patties. These are so easy to make, require only a handful of ingredients and you can pre-make them for the entire week for your lunches. Doesn’t get much haute + healthier than that! Oh, and they taste pretty great too…read after the jump for the details.

spinach patties - Haute + Healthy

1 bag of chopped frozen spinach or 2 blocks of frozen spinach
Handful of feta cheese
1 cup breadcrumbs
3 eggs
Red pepper flakes + whatever seasoning you want (we used Everglades seasoning)

– Premix all ingredients in a large bowl and let it sit for about an hour before forming into patties
– Heat a non stick skillet over med-high, spray with a bit of Pam
– Form patties out of your pre-mixed ingredients
– Pour some oil (we used coconut) in the pan and set the patties on the pan, we did two at a time
– Cook the patties about 4 minutes each side, pressing with a spatula
*The most time involved is waiting for them all to cook*

Tips & Tricks:
– We topped our patties with dijon mustard, but I think a low-fat greek yogurt sauce would be amazing
– Toss the patties on a salad or in whole wheat pitas for a complete meal
– Serves 6-8 patties, dependent on how big you make them
