Why have chocolate when you can have truffles? Healthy, raw, all-natural truffles, at that. I am not lying when I tell you that this is by.far.the.most.amazing dessert I have ever made. You HAVE to make this. It tastes like real chocolate; I almost can’t even believe it. I am so excited over these little truffle babies, if you can’t tell. And it takes a whole 5 minutes to whip up this shortcut to heaven. The hardest part? Waiting for them to chill in the fridge for an hour. I sped up the process last night and popped them in the freezer for a few so I could get at them quicker! Deets after the jump.
Obviously you will want to quadruple my recipe as 4 of these things is so not enough.
Haute + Healthy Raw Cocoa Dessert Truffles Recipe Ingredients (makes 4 small truffles):
- 1/2 cup soft pitted dates
- 2 tbsp cocoa powder
- 2 tsp coconut oil, melted
- 12 almonds, crushed into pieces [put them in a ziplock bag and crush them with a glass jar]
Directions: Place first 3 ingredients in a food processor and mix on high until smooth. If the mixture is too powdery or dry, add 1 tsp of water at a time [I ended up adding 2 tsp of water total]. Once smooth, form into small balls. Roll each truffle in the crushed almond mixture. Refrigerate at least 1 hour before serving. Keep refrigerated.
