Whole Wheat Gnocchi with Tomatoes, Artichokes & Pesto.

This is a quick and easy recipe to make for two [or for yourself and portion it out over a few nights]. I am extremely lazy and challenged in the kitchen, but if you are a chef like my bf check out this DIY whole wheat gnocchi recipe instead of the quick and painless way I make mine.

Haute + Healthy whole wheat gnocchi recipe

Ingredients: Whole wheat gnocchi [made of sweet potatoes], tomatoes, artichoke hearts & pesto.

Recipe: Boil the gnocchi. Cook tomatoes and artichoke hearts separately in pan with olive oil.

Mix everything together. Top with low fat cheese and enjoy with some red wine!
