Last night Kristin hosted a mellow girl’s night in where we noshed on filled sweet potato skins and a salad with pears, walnuts & gorgonzola cheese [thanks Chrissy!]. We shared girl talk while sipping on ginger champs spritzers and for dessert K served out-of-this-world chocolate covered bananas. Ginger Champs Spritzers: Mix 1/4 cup of sugar + 9 packets of Stevia + 1/4 cup water and 1/4 cup fresh ginger, boil on stove until bubbling. Reduce to a simmer, squeeze in 3 tbs. of honey/agave. Use small spoon of mixture to top off glasses of champagne and add splash of soda water to each.
Filled Sweet Potato Skins: Bake sweet potatoes until soft, cut in half and empty filling into bowl. Mix in chickpeas and kale to sweet potato filling and top off with cheese of your choice. Put entire filling back into skins and bake for 15 minutes.
Pear, Walnut + Gorgonzola Salad: Top mixed greens with sliced pears, walnuts and gorgonzola cheese. Create your own dressing on the side by mixing balsalmic, cinnamon and basil.
Chocolate Covered Bananas: Cut bananas in half, insert skewer stick through bottom and lay on parchment paper/aluminum foil-lined sheet. Melt 1/2 cup chocolate on stove until soft, dip banana halves in chocolate mixture and return to sheet. Cover bananas with coconut flakes, walnuts and cacao [or whtever you prefer!] and freeze for at least 30 minutes.
