Last night the bf jumped on board with our Tone It Up Holiday Hottie meal plan and made the Hearty Mushroom Soup for the three of us. Let me just say, it was amazing and even the bf loved it (although I think he would have preferred meat to tofu, but he will live). This recipe makes six hearty servings and tastes even better the next day; I ate the rest for my lunch today. Enjoy!
Ingredients (we tweaked their recipe to suit us)
6 cups of vegetable broth
1 yellow onion, chopped
3 tablespoons olive oil
2 packages of portobello mushrooms, sliced
2 teaspoons thyme
1 clove of garlic, crushed
1 cup plain coconut milk
1 package of firm tofu
*He just added everything to a pot and let it boil, simmering for an hour before serving.
