Haute + Healthy Couscous Stuffed Peppers Recipe

Sure, stuffed bell peppers are delicious, but are they really healthy? Most of the time “stuffed” means filled with cheese, breadcrumbs, and other not-so-healthy ingredients. Recently I cleaned up a stuffed-pepper recipe and created a Haute + Healthy approved version. My recipe is totally vegan, yet delicious and healthy at the same time! Try it for yourself:

Haute + Healthy Couscous Stuffed Peppers Ingredients:

(makes 2 stuffed peppers)

  • 1 1/2 cups couscous
  • 2 tsp olive oil
  • 4 cherry tomatoes, chopped
  • 1 cup portobello mushrooms, chopped
  • 2/3 cup white beans, canned
  • 2 tbs nutritional yeast (optional)
  • 2 bell peppers, cored and cleaned out

Directions: Cook couscous according to package. While couscous is cooking, sauté mushrooms and tomatoes in olive oil for approximately 4-5 minutes. Rinse and drain white beans and add to the pan for the last 1 minute, to heat up. Add couscous, sautéed veggies, and beans together and stuff the cored peppers with the mixture. Add nutritional yeast if desired. Bake at 375 degrees for approximately 12 minutes.
