Sweet Potato/White Bean Veggie Burger.

When you want a hearty, delicious burger, a veggie burger probably isn’t the first thing that comes to mind. Especially one that is also vegan. However, the sweet potato and white bean veggie burger that I whipped up for last night’s dinner truly impressed me. It is clean, all-natural, absolutely delicious, and I had to refrain from eating the 2nd one {that’s today’s lunch}. Try it for yourself, I promise it stacks up to a real burger! For a side dish, I sliced the remaining sweet potato and made healthy baked sweet potato fries, with an aioli dipping sauce. My whole dinner clicked in under 500 calories, yet tasted completely indulgent.

Sweet Potato/White Bean Veggie Burger Ingredients:

(makes 2 burgers)

  • 1/4 cup sweet potato, skins removed, baked
  • 1/2 cup white beans
  • 1 1/2 tbsp whole wheat flour
  • 2 tablespoons onion, chopped
  • 1/2 tbsp tahini
  • 2/3 tsp light agave syrup
  • 2 tsp nutritional yeast
  • 3 tbsp fresh rosemary herbs, chopped
  • Pepper
  • Cayenne pepper
  • Tabasco
  • 2 Thomas Bagel Thins, Whole Wheat
  • 6 large slices avocado
  • 4 large slices tomato

Directions: In a bowl thoroughly mash together the first 8 ingredients. Add pepper, cayenne pepper, and Tabasco to taste. Form into 2 patties. Bake at 380 degrees for about 30 minutes, flipping once. Toast a Bagel Thin and add veggie burger. Top with avocado and tomato. Enjoy!

Nutrition info (per burger, including Bagel Thin and veggie toppings): 340 cal, 9g fat, 200 mg sodium, 57g carb, 15g fiber, 8g sugar, 14g protein

Aioli Dip Ingredients: (makes 2 servings)

  • 2 ounces plain Greek yogurt {I used Chobani, of course}
  • 3 tsp lemon juice
  • 1 tsp lime juic
  • 1 1/2 tsp Vegenaise {I used this one, with grapeseed oil}
  • Tabasco
  • Pepper

Directions: Mix first 4 ingredients in a small serving dish. Add Tabasco and pepper to taste.

Nutrition info (per serving): 40 cal, 2g fat, 30mg sodium, 2g carb, 1g sugar, 3g protein
