Homemade Pesto Recipe.

If you’ve never made your own pesto and have been sticking to the store-bought kind, then you might not be aware of just how amazing the simple combination of fresh basil, garlic, lemon, olive oil, and {a little bit of} cheese can really be.  Over the weekend my friend and I threw together an easy dinner consisting of whole-grain pasta tossed with homemade pesto and topped with tomatoes, with a huge salad on the side. The combination of the olive oil in pesto and the tomatoes pack a double health benefit: the healthy fats from olive oil help the body to better absorb the antioxidants and nutrients in tomatoes. Haute + Healthy Homemade Pesto Ingredients:

(Makes enough for 6 servings of pasta)

  • 2 cups fresh basil, packed
  • 2 cloves garlic, minced
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup fresh parmesan cheese (does not need to be grated)
  • several squeezes of fresh lemon
  • salt + pepper, to taste

Directions: Combine and basil, garlic, lemon and cheese in a food processor and pulse until chopped.  Pour in the olive oil and continue to process until smooth. Add salt + pepper to taste.

Nutrition info (per serving, without pasta): 200 cal, 21g fat, 150mg sodium, 1g carb, 4g protein
