Tahini Dressing Recipe.

Few TV shows get me more excited/angry to watch than the Bachelor/Bachelorette series. Every season it’s the same thing; I end up staring at the TV wondering what in the world these women and men are thinking as they cry into the camera, once they get booted off, about how no one will ever love them again. Entertaining, yet annoying at the same time. What makes my Bachelorette Monday nights better?  Having friends over to laugh at this ridiculous show that I still insist on watching, and making a healthy dinner.  Last night’s fare included a raw veggie salad, baked sweet potato fries, and homemade tahini dressing.

Tahini (just a paste of ground-up sesame seeds) has a strong, peanut-like taste, but when you mix it with water and lemon it tastes light + refreshing, and delicious over fresh veggies. Tahini is great because it contains minerals, lots of vitamins, and healthy fats.  Follow the recipe below to make a serving of tahini dressing for yourself.  Mix together the ingredients and add salt + pepper to taste:
