What do you do when you have two hungry people and nothing in the fridge? Improvise darling. It is embarrassing to admit, but last night the only ingredients I could put together were spinach and sweet potatoes. When I did some research on Pinterest I found quite a few pins on spinach and sweet potato quesadillas so this recipe was born. Luckily we had some tortillas and a little bit of cheese left in the fridge. The bf only had to pick up salsa and the recipe was so simple I actually did the cooking [it is Valentine's Day after all!]
Ingredients:
Tortillas [we used 8 small tortillas] – this made 4 small quesadillas
2 sweet potatos, chopped into pieces and baked
1 cup chopped spinach
3/4 cup of cheese [we used low-fat feta]
olive oil for cooking
fresh salsa for dipping
*this would have been amazing with some Chobani plain greek yogurt as sour cream*
Directions:
Chop your sweet potatoes into pieces, I cut mine like sweet potato fries. Bake them at 425 for about 30 minutes.
Chop up your spinach.
Once the sweet potatoes are baked, assemble your quesadilla: Place an even layer of sweet potato, spinach and cheese over one tortilla, followed by another tortilla on top. [You could also just put the ingredients in a warm tortilla to create a taco instead of a quesadilla].
Throw a teaspoon or so of olive oil on a skillet over medium high heat. Cook the quesadilla for about 3 minutes per side, until the cheese is melted and the tortillas are lightly browned.
Enjoy with your bf or your bff!

I love sweet potato and cheese quesadillas! I also will saute up an onion and add that too (I love onions. Is that weird?). So yummy. I will definitely add some spinach next time I make them.
